Masa Encrusted Tilapia with Gouda Grits and Chow-Chow



Masa Encrusted Tilapia with Gouda Grits and Chow-Chow

½ Pound Tilapia Filets
½ cup Masa
2 Tablespoon Canola oil
Sea salt and cracked black pepper

Season both sides on salmon with masa, salt and pepper. In a cast iron add oil over medium high heat. Place tilapia in hot skillet and cook for 3 minutes or until golden brown.  Flip tilapia and cook for an additional 3 to 4 minutes or until fish is cooked to desired temperature. Remove from heat and plate over Gouda grits. Top with chow-chow and arugula.

Gouda Grits
3 cups Fat Free Milk
1 cup Masa
1 teaspoon Salt

5 ½ Tablespoon Butter
½ cup Milk
¾ cup Gouda, Grated
¼ cup Parmesan, Grated
1 Garlic Clove, Grated
Salt & Pepper, To Taste

Chow—Chow
Arugula (If desired)

 In a medium stock pot, over medium heat, add milk. Heat until milk starts to boil. Add salt. Gradually add masa, whisking constantly, to prevent clumping. Continue whisking until masa is thoroughly incorporated. Reduce heat and cook for 15 minutes. Add butter, ½ cup milk, cup Gouda, cup Parmesan cheese, garlic, salt & pepper to taste. Mix until incorporated. Remove from heat and serve.


**On center of plate add a serving of cheese grits. Top with a Tilapia filet. Add Chow-chow garnish.  Serve and enjoy!

If desired, in a small bowl add arugula. Drizzle with Chow-chow liquid & toss well. Use the arugula greens a garnish.

Goat Cheese Crostini with Basil & Baby Pickled Beets
2oz Goat Cheese, Softened
4oz Cream Cheese, Softened
3 teaspoons, Minced Red Onion
Salt & Pepper to Taste

½ cup Baby Pickled Beets, Sliced

Fresh Basil, Garnish

Small slices for bread, such as baguette, sliced sandwich bread, or hotdog buns, toasted lightly on each side.

In a small bowl, mix all cheeses, onion and salt and pepper to taste.

Add 1 Tablespoon for cream cheese mixture to each bread piece. Top with two beet slices and basil garnish. Serve and enjoy!

Blackberry Baguettes
2oz Goat Cheese, Softened
4oz Cream Cheese, Softened
Juice of a Mandarin Orange
Zest of a Mandarin Orange
2 Tablespoons, Blackberry Butter
Salt & Pepper to Taste

Fresh Blackberries

Fresh Basil, Garnish

Small slices for bread, such as baguette, sliced sandwich bread, or hotdog buns, toasted lightly on each side.

In a small bowl, mix all cheese, juice, zest, butter and salt and pepper to taste.

Add 1 Tablespoon for cream cheese mixture to each bread piece. Top with a blackberry and basil garnish. Serve and enjoy!

Gluten Free Banana Foster Cheesecake with Butternut Squash Drizzle



Gluten Free Banana Foster Cheesecake with Butternut Squash Drizzle
Super Simple  - No Bake Cheesecake

2 Tablespoons Chopped Banana
3 Tablespoons Butternut Squash Butter
1 Tablespoons Water
2 teaspoons vanilla extract

1 Can Sweetened Condensed Milk
1 8oz Container Whipped Topping
1 8oz Package Cream Cheese

Gluten Free Snickerdoodle Cookies

In muffin silicon pans pat out as a crust. Will make 24 individual crusts. Set aside.

In a small sauce pan, over medium low heat, combine banana, squash butter, water & vanilla extract. Heat ingredients until, mixture starts to bubble. With a spatula, macerate bananas until they are broken down and incorporated. Cook an additional 5 minutes & remove from heat. Allow mixture to cook

In a mixing bowl shipped cream cheese until light & fluffy. Add banana and mix until smooth. Add condensed milk and mix well. Scrape down sides & blend an additional 2 minutes. Add whipped topping and blend on low.  

Spread cream cheese mixture evenly in to containers and chill. For a more firm cheese cake, freeze cheese cakes for 4  to 4 ½ hours or until firm. Remove & Serve

Butternut Drizzle
¼ cup brown sugar
2 Tablespoons Butternut Squash Butter
2 Tablespoons Butter
1 teaspoon Vanilla extract
1/8 teaspoon Rum extract
½ Banana, thinly sliced

In a small sauce pan, over medium low heat, combine sugar, butternut squash, butter & extracts.  Mix well. Heat for 5 to 7 minutes or until sugar is melted and all ingredients are incorporated. Add slice bananas & coat with drizzle. Once mixture starts to bubble, pull from heat and allow the drizzle to cool.

Plate cheese cakes. Add banana slice to each piece and drizzle with sauce.

Smoked Meatloaf...Gluten Free!

Gluten Free Smoked Meatloaf
So delicious you’ll love it….even if you don’t like meatloaf!

2 lb ground beef (80-20%)
2 eggs
2/3 c. fine, gluten free bread crumbs
½ c. ketchup
4 scallions, chopped
1 tsp. sea salt
2 tsp gluten free soy sauce
½ tsp ground black pepper
½ tsp rubbed sage
¼ tsp coriander

4 pieces gluten free bacon, sliced into halves
¼ c. ketchup, split

Canola oil

Mesquite chips

Water Pan Aromatics: 1 cayenne pepper (sliced), 1 tangerine (sliced; juiced & peeled) 1 small onion (peeled & quartered), Leaves of 1 celery heart, 2 tsp black pepper, 1 tsp coriander & 1 tsp sea salt. Add water to top off pan.

Prepare smoker according to manufacture directions. Add wood chips & water pan to smoker. Heat smoker until it starts producing smoke.

Brush 2 glass or metal loaf pans with oil.

Mix all ingredients (in first section, being careful not to over mix.) Over mixing will cause the meatloaf to be tough.

Divided the meat mixture in half & pat out meatloaves, one in each pan. In the center of each meatloaf make a small well. Fill each well with 2 T. of ketchup. Top with Bacon.

Smoke meatloaves for 3 to 4 hours or until desired doneness. Remove from smoker & serve.

Dining on the Outer Banks

We headed out to the Outer Banks on another recent gluten free trip!  After falling in love with the OBX, I've continued on my search for gluten free food on the Northern Beaches. This trip was extremely different, as we experienced the chill of November. Actually, it's quite beautiful and refreshing to visit the OBX in the off season. There's a laid back vibe with no need for reservations.
 
Sound Side in the Outer Banks





Each time I grace this amazing stretch of coastline, I find more options for the gluten free diner. Typically, I bring groceries to our rental home and prepare most of our meals in house.  I've found several gluten free options at the local supermarkets including a gluten free, Mi-del Graham Style Pie Crust which made for a quick Key Lime Pie.

Timbuck II - Corolla, NC
When traveling to the OBX in the off season, many of  the restaurants and retail establishments will be closed. So before making the trek out, just give them a call to see if they are closed for the season or if they are keeping limited hours. Many of the restaurants will stay open through Thanksgiving and then will close until March.  
La Dolce Vita - Corolla, NC


We were thrilled this trip to discover La Dolce Vita, located in the Timbuck II complex in Corolla, NC.  We slipped in this quaint restaurant located on the sound for their last day of the season. The good news...they'll be opening in the Spring.  The interior features a contrast of paint and dark woods. Looking out the windows provides views of the sound. 
In warmer weather the restaurant extends to the deck.
La Dolce Vita - Timbuck II
   On the opposite wall they have large wooden booths with granite tops, making lunch quite private and romantic.  As I looked over the menu I found several gluten free options. The menu even had **Go Gluten Free,** located on the bottom. Our server explained that a few ingredients wouldn't be available because it was last day of the season. During peak season, our server shared with us that they have gluten free bread for sandwiches.
Antipasto Salad - La Dolce Vita
We decided to forgo the gluten free pasta that was available that day and enjoy salads instead. I chose the Antipasto Salad with House Dressing. My serving size was very large, I even had leftovers to pair with my gluten free Spaghetti I prepared later that night. My salad was topped with roasted red peppers and fluffy cheese...almost like snow. They careful rolled layers of ham, provolone and pepperoni and placed them on the side. 
I enjoyed the saltiness of the meat as they played off of the vinaigrette.
Smoked Salmon Salad - La Dolce Vita
Kevin selected the Smoked Salmon Salad for his entree with Balsamic Vinaigrette. The flakiness and moistness of the smoked salmon was fabulous. The richness of the Gorgonzola and the texture of the walnuts added immensely to the overall dish.

Tomato Patch - Corolla, NC
I've made more trips than I can count to the OBX and many were before going gluten free. One of the places that I could depend on for a quick bite was the Tomato Patch Pizzeria, located in Corolla, NC. I haven't been able to eat there since going gluten free. I was absolutely thrilled to hear they are now offering gluten free pizza!

Kevin and I decided to go the classic route with pepperoni pizza...well actually 2 of them.The pizzas were loaded with cheese, just like we like them. The crust was a nice of amount of thickness, I found it quite delicious. However, my favorite part of the entire pizza was the sauce....wow! For those people who enjoy beer & pizza, our serve mentioned that they now carry Omission.
