Gluten Free Smoked Meatloaf
So delicious
you’ll love it….even if you don’t like meatloaf!
2 lb ground beef (80-20%)
2 eggs
2/3 c. fine,
gluten free bread crumbs
½ c. ketchup
4 scallions,
chopped
1 tsp. sea
salt
2 tsp gluten
free soy sauce
½ tsp ground
black pepper
½ tsp rubbed
sage
¼ tsp coriander
4 pieces gluten
free bacon, sliced into halves
¼ c.
ketchup, split
Canola oil
Mesquite
chips
Water Pan
Aromatics: 1 cayenne pepper (sliced), 1 tangerine (sliced; juiced & peeled)
1 small onion (peeled & quartered), Leaves of 1 celery heart, 2 tsp black
pepper, 1 tsp coriander & 1 tsp sea salt. Add water to top off pan.
Prepare smoker
according to manufacture directions. Add wood chips & water pan to smoker.
Heat smoker until it starts producing smoke.
Brush 2
glass or metal loaf pans with oil.
Mix all
ingredients (in first section, being careful not to over mix.) Over mixing will
cause the meatloaf to be tough.
Divided the
meat mixture in half & pat out meatloaves, one in each pan. In the center
of each meatloaf make a small well. Fill each well with 2 T. of ketchup. Top
with Bacon.
Smoke
meatloaves for 3 to 4 hours or until desired doneness. Remove from smoker &
serve.
